| Taco seasoning | 1 packet |
| Shredded cheddar cheese | 4 oz |
| Olive oil | 1 tbsp |
Amounts are for 4 servings. Use the dinner planner to scale a whole week and build one grocery list.
Method
- Dice the onion, pepper, and zucchini. Heat 1 tbsp oil in a large skillet over medium-high and cook the onion and pepper 3 minutes.
- Add the turkey and cook, breaking it up, until no pink remains, about 6 minutes. Stir in the taco seasoning and 1/2 cup water.
- Add the zucchini, the drained black beans, and the corn. Simmer until the zucchini is tender, 5–6 minutes.
- Sprinkle the cheese over the top, cover off the heat for 1–2 minutes to melt, and serve in bowls or tortillas.
