Amounts are for 4 servings. Use the dinner planner to scale a whole week and build one grocery list.
Method
- Pat the shrimp dry and toss with half the fajita seasoning, a little oil, and the juice of one lime.
- Slice the peppers and onion. Heat 1 tbsp oil in a large skillet over medium-high and cook the peppers and onion with the rest of the seasoning until softened and charred at the edges, 5–6 minutes. Push them to one side.
- Add the shrimp in a single layer and cook until pink and opaque, 2–3 minutes a side.
- Warm the tortillas. Serve the shrimp and peppers with the second lime in wedges.
