Lemon-Garlic Salmon with Rice

Bake the salmon while the rice steams.

Ingredients

IngredientAmount
Salmon fillets1 1/2 lb
White rice2 cup
Lemon2
Garlic4 cloves
Green beans1 lb
Butter3 tbsp
Olive oil1 tbsp

Amounts are for 4 servings. Use the dinner planner to scale a whole week and build one grocery list.

Method

  1. Start the rice: cook 2 cups white rice per its package (about 3 1/2 cups water, 15–18 minutes).
  2. Heat the oven to 400°F and line a sheet pan. Pat the salmon dry and set it on the pan. Melt the butter with the minced garlic, the zest and juice of one lemon, and a pinch of salt, and spoon it over the salmon.
  3. Trim the green beans, toss them with the olive oil and a little salt, and scatter around the salmon.
  4. Bake 12–15 minutes, until the salmon flakes and the beans are tender-crisp. Serve over the rice with the second lemon in wedges.

My simplified version leans on a published recipe I trust. I haven't reworked it into a tested original like the bread — so here's the source, with credit where it's due.
